Princess Peach Pink Cupcakes

Mario finally found the right castle and got to marry his princess and instead of a wedding cake had wedding cupcakes! These Princess Peach inspired pink cupcakes actually have peaches in them with a princess crown on top made from fondant. Red and yellow food coloring was used to achieve the pink color of Peach’s dress in the cupcake and the yellow of her hair in the frosting.

  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 4 tablespoons butter, at room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peach extract
  • 3/4 cup buttermilk
  • 1/4 cup peach puree
  • red food color

  • 2 cups fresh or frozen peaches, pureed
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch

  • 3 sticks unsalted butter, softened
  • 1 pound confectioners’ sugar, sifted
  • 1/2 teaspoon pure vanilla extract
  • yellow food coloring

  • fondant
  • yellow food color

Preheat the oven to 350 degrees F

In a medium bowl, whisk together the flour, baking powder, baking soda and salt. In a large bowl, beat the sugar and butter together using an electric mixer until it looks creamy. Beat in the egg, vanilla extract and peach extract until the mixture is smooth. Add half of the flour mixture to the butter mixture and stir until almost combined. Add the buttermilk and peach puree and stir again until almost combined. Add the rest of the flour and stir until all the ingredients are mixed in.

Bake for 18 to 20 minutes.

Place small saucepan on the stove top and put on medium heat. Put the peaches and sugar in and bring to slight boil. In a separate small bowl, mix the cornstarch and 1 tablespoon water until no lumps. Add the cornstarch mixture to the pan and keep on medium-low heat for about 1 minute. Cool completely before use.

Beat butter with mixer on medium-high speed about 2 minutes. Reduce speed to medium. Add sugar, 1/2 cup at a time, beating after each addition, about 5 minutes. (After every 2 additions, increase speed to high, and beat for 10 seconds, then reduce speed to medium-high). Add vanilla, and beat until smooth.

Fill the cupcakes with the peach filling and then frost with the buttercream frosting.

  1. Hello I was viewing the recipe for princess peach cupcake recipe and I saw the peach and mario wedding, I was hoping if you knew where I could get the huge green plumbing pipe or how I could make it? In my instance its when geeks have children. My daughter will be turning 1 in May 2013 and Her party is princess peach themed. Im having mushroom stools made and would love the pipe for photos.

    Thanks Keily

    • Hi Keily,

If it’s the green pipe from the sweetheart table it’s made with that green, glittery foam paper from the craft store that I rolled up and glued. The huge red pipes in the Mario inspired wedding I believe are made from wood and just painted red.

      Hope this helps.
